Cinnamon Muffins - GF, SF, Keto - makes 12

Wet Ingredients

3 eggs

½ cup egg whites

1 cup water

¼ cup coconut oil, melted

1 teaspoon vanilla

 

Dry Ingredients

1 ½ cups SCB Baking Blend

½ cup almond meal

1 teaspoon baking powder (GF/AF)

1 teaspoon baking soda

¼ cup cinnamon (Ceylon preferred)

½ teaspoon sea salt

2 Tablespoons Erythritol (NOW brand)

2 teaspoons Better Stevia (NOW brand)

Can use keto sweetener of choice (i.e., Truvia, Swerve, Monkfruit, etc.).

Preheat oven to 350o F.  Into blender, add eggs and egg whites.  Add water, coconut oil, and vanilla. Blend well for 20 seconds. Put SCB Baking Blend and almond meal into mixer bowl of stand-up mixer. Add baking powder and baking soda.  Add cinnamon and sweetener(s).  Add sea salt.  Mix well.  Pour blended wet ingredients into dry ingredients and mix together well. Pour into sprayed paper muffin cups.  Bake at 350o F for 30 minutes.
