Pancakes With Baking Blend (makes 9-12 pancakes)
¾ cup water
¾ cup unsweetened almond milk
1 teaspoon vanilla
1 cup SCB Baking Blend
2 teaspoons baking powder (GF/AF)
1 ½ teaspoons Erythritol (NOW brand)*
1/8 teaspoon Better Stevia (NOW brand)*
½ teaspoon sea salt
*Or use equivalent keto sweetener of choice (i.e., Truvia, Swerve, Monkfruit, etc.).

Preheat electric griddle or large skillet to 350o F (medium high heat). In medium size bowl or 4 cup measure, combine wet ingredients. Blend using a fork to incorporate eggs. In large bowl, combine dry ingredients. Pour blended wet ingredients into dry ingredients and mix together well, using a whisk to remove clumps. Spray the griddle or large skillet. Using a ladle, pour about 1/3 cup (large pancake) or 1/4 cup (smaller pancake) of batter onto griddle. Cook on one side, about 3-5 minutes. Flip and continue cooking on other side until brown for another 3 minutes. Place on paper towels before serving. Serve with butter or non-dairy approved fat for Ketogenic fat burning.
